Looking for a way to use up some overripe bananas? Look no further. This blueberry banana bread is THE BEST (I may be a little biased š ). You probably have everything you need on hand. Super easy to make, and takes about an hour plus prep time.

Ingredients
2 Cups Sugar*
2 Sticks Softened Butter
4 Eggs
2 tsp. Vanilla
1/2 Cup Buttermilk*
1 Quart Blueberries and Mashed Bananas*
3 Cups Flour
1 tsp. Salt
1 tsp. Baking Soda
Okay, let's get started!
1. Preheat your over to 350Ā°F. You'll need 2 bread loaf pans for this recipe*. Grease the pans with pam, butter, whatever you prefer.
2. In the bowl of a stand mixer*, cream together the butter and sugar until fluffy (about 2 minutes).
3. In a separate bowl, whisk together the flour, baking soda, and salt.
4. Add the eggs in with the butter mixture, one at a time, at a low speed. Mix after each egg. Add the buttermilk, vanilla, and fruit.
5. Add the flour mixture, mixing until just combined. There IS such thing as overmixing here, so just watch it.
6. Divide the batter between the two loaf pans. Bake for around an hour*
Additions:
You may add chopped nuts, I just don't prefer it. Start with 1 cup and go from there.
Cinnamon makes a nice addition! Start with 1/2 tsp.
Notes
*You could use 1/2 cup less sugar if you would like. I can't say what would happen if you used any less than that.
*If you don't have buttermilk, just make your own. To do this, add 2 Tbsp of vinigar or lemon juice to a liquid measuring cup. Add milk to the 1/2 cup line and let it sit for 5 minutes.
*For the fruit, I usually end up using 5 bananas and topping off with about one pint of blueberries. This is about half and half. I recommend using at least half banana for the correct texture, but use what you have or to your preference.
*You could probably make muffins with this recipe. Just start off with 35-40 minutes and check the center with a toothpick.
*You don't HAVE to use a stand mixer, i just like mine š
*Check the center of your loaves with a toothpick. Try to wait to remove the bread from the pan until it has slightly cooled (I know, it's hard to resist).
